  • 1 lb. poi
  • ¾ C. water*
  • 2 C. flour
  • ¾ C. sugar
  • 2 t. cinnamon
  • 2 t. baking powder
  • 1 t. salt
  • 3 eggs, slightly beaten
  • 1 C. oil
  • 2 t. vanilla
  • 1 ½ C. nuts



Mix poi and water together and let stand in bowl. In another bowl, mix together flour, sugar, cinnamon, baking powder and salt. Combine both mixtures with the remainder of the ingredients and place in greased loaf pans. Bake at 350 degrees for 45 minutes. Optional: Add ½ C. raisins.
